    Have any of you been having some great tasting Paleo dressings for your salad? Are there any that are in the restaurants? Are there any in the stores that you can buy? Do any of you have any recipes for dressing? I found this recipe this morning that for mayo that may taste good on a salad. I'll have to try it.
    Ingredients for the coconut Paleo mayonnaise (yields about 1 and 1/4 cups)
    2 egg yolks
    1 tsp mustard (this is optional)
    3 tsp lemon juice
    1/2 cup olive oil
    1/2 cup coconut oil

    Baconnaise variation
    1 cup liquid bacon fat (you can of course use rendered lard, it’s the same thing) in place of the olive and coconut oils

    Put the yolks in a bowl (blender, food processor) with the mustard, if using and 1 tsp lemon juice and mix those ingredients together;
    Start whisking vigorously (blender or food processor on low) while dripping the oil very slowly, even drop by drop in the beginning. You’re creating an emulsion and if you put too much oil at once, it will separate and will be very hard to save. Whisk non-stop and use a towel under the bowl to help stabilize it;
    As you add more oil, the emulsion will form and the mayonnaise will start to thicken and you can pour the oil faster at this point;
    When all the oil is incorporated and the mayonnaise is thick, add the rest of the lemon juice and taste your creation. You can season to taste with salt and pepper;
    Enjoy without guilt and put the store in the refrigerator!

    1. For a non leafy salad I make I like this dressing:
      Olive oil, lime juice, apple cider vinegar, dill, salt & pepper.
      My salad is sliced olives, yellow and red tomatoes, cucumber, avacado and any meat. I usually use leftovers from whatever I had the night before. Fish, chicken, steak.

    Missing waffles? I have a great recipe my whole family loves!

    1 puréed banana
    1 puréed apple (or 3/4 cup unsweetened applesauce)
    1 cup unsweetened nut butter (I use half sun half almond)
    1 T vanilla
    1 T arrowroot powder
    1/2 tsp baking soda
    3 eggs (if doubling recipe use 5)
    Oil for greasing waffle iron
    Optional cinnamon

    We like to top ours with fresh fruit and coconut cream (a can of full fat coconut milk, drain off excess water, whip with a drizzle of honey)

    Since I'm not having honey I ate mine with 2 eggs on top!! ;)
