***** RECIPE***** Fresh sliced yellow and/or zucchini squash Minced or fresh onions Spices (I used parsley, basil, pepper last night) Olive oil - Just throw everything in a non stick pan and cook as long as you want. I cook mine until well done. Yum!! Taste as good as if I had breaded it first.
I cooked on high heat, stirred constantly, and blackened a little. Was Yummy!!!!

Beef and Vegetable Chili 2 medium zucchini, diced1 yellow zucchini, diced1 large red pepper, diced4-6 large kale leaves, shreddedfresh cilantro for garnishgreen onions for garnish1 small can full fat coconut milk (placed in the fridge for a few hoursHeat large soup pot over medium-high heat.When hot, add coconut oil and onion to pot and brown slightly.Meanwhile, combine chili powder, sea salt, cumin and garlic salt in a large dish. Roll raw beef stew meat in the mixture to coat on all sides.When onions have browned slightly, add beef and brown on all sides.Add the diced tomatoes. Fill the empty can with water and add to the pot. Add green chilis, jalepenos, chipotle peppers, mushrooms, carrots, oregano, thyme and bay leaf. Turn heat down to medium and cook for about 40 minutes, stirring occasionally.Add zucchini and red pepper, and cook for another 20 minutes.Add kale and finish cooking for 10 more minutes. I was told we don't miss points for missed meals. I was told that at first then told as long as you eat 100% Paleo for the day, you get all 25 pts. I was told that we couldn't go back and correct any of our points but that we could count them for the future. Wanted to let you know so you could check with your coach to be sure to get all of your points. :-)
