  13. Someone was asking about Acorn squash for breakfast yesterday... Here is a great "porridge" or cereal we love to eat!
    Cut acorn squash in half... rub coconut oil on each half, and then sprinkle cinnamon or pumpkin pie spices on the halves;
    flip them over on a baking sheet( I use parchment under it) and roast in 425 oven til they are VERY Soft. Softer the better.
    Then scoop out the insides into a bowl... add about 1/4 cup of almond butter, or cashew butter to the squash (we usually do 2 large squashes so I do about 1/2 cup of nut butter.. its to your taste.. use more or less)... then stir the whole thing up and mash it so it turns into a cereal. Then scoop into bowls. An excellent topper is some cool coconut milk..... (from can!! shake it first). If you are not on a challenge (or really skinny like my husband.. haha) you can add some maple syrup AND coconut milk... TOTAL YUM!

  18. Hello everyone!! Day three and already feeling a bit groggy. It was stated that this feeling was going to happen, so the sooner it passes the better! On a lighter note, This morning I had an allergy test....I CAN EAT WALNUTS, PECANS, HAZEL NUTS, CASHEWS, AND PISTACHIOS!! It's been over 10 years since I've avoided them due to the fear of allergic reactionS of peanut butter and tree nuts. But It's a green to go on these and will be adding them to the list of paleo foods I can eat. Going to get tested for Coconut oil next....I have my fingers crossed for that one

    Didn't eat breakfast since I had my test this morning. Came home really really hungry so here is what I gobbled down:
    Sweet potato slices
    asparagus
    roasted chicken
    some water

    Day 3 is going and I didn't give in the the baconator at wendy's!! #TeamDetermined
